you should see the kale
Man, you should see my kale, it's enormous! I think it grows about a foot a day...I really need to figure out what to do with 50 lbs of kale, unfortunately most kale recipes are more geared towards winter. Guess that means I'm making soup and freezing it until November...

good and easy:
cook some onion and garlic pieces in oil. add some spinach (if you want) or just a bunch of kale, w/salt & pepper. cook down to soft but not mushy. pop a can of refrigerator biscuits. if you are less lazy than me, or vegan (i don't remember), make homemade biscuits. roll them out to big flat circles. mix crumbled feta (tofu?) in with kale mess. put a big blob of kale mess in each biscuit and fold over, pinch shut. place on greased cookie sheet, sprinkle with parmesan or not. bake at 350 til golden. kinda like calzones, kinda like spanakopita. yum
